Ingredients

  • For the cake:

    • 3 large eggs
    • 1 cup granulated sugar
    • 1/2 cup unsalted butter, melted
    • 1/2 cup whole milk
    • 1 tablespoon matcha green tea powder (culinary grade)
    • 1 teaspoon vanilla extract
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • A pinch of salt
  • For the topping:

    • 200g (7 oz) white chocolate, melted
    • 1/4 cup heavy cream
    • 1 teaspoon matcha green tea powder (optional, for garnish)
  • For decoration (optional):

    • White chocolate shavings
    • Fresh mint leaves

Instructions

  1. Prepare the cake:

    • Preheat the oven to 180°C (350°F) and grease a 22cm (9-inch) round cake pan with butter and flour.
    • In a mixing bowl, whisk the eggs and sugar until light and fluffy.
    • Add the melted butter, milk, matcha powder, and vanilla extract. Mix well until all the wet ingredients are fully incorporated.
    • In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, folding gently to avoid overmixing.
